After looking it up I found out that chelation uses chelating agents that bind to metal ions that prevents these metals like iron or copper from catalyzing chemical reactions that spoil food or cause discoleration thus helping food have a longer shelf life. This advertisment highlights that this product has been used for years emphasizing their longevity. I also found it interesting that this product mentions the manual to use Versene chelating agents. This is something that I have noticed in multiple advertisments that they are promoting a book or manual about a product.
