Improved volume and uniformity of crumb structure with METHOCEL gums are due to enhanced moisture retention, film-forming properties, and thermal gelation which aids in batter stability and the formation of larger, stronger gas cells.
The answer is to add one of the versatile family of METHOCEL* Premium food gums-just 0.2-0.5% in cakes, doughnuts, and pastries. The result is spongier, lighter, more symmetrical textures that stay that way longer on the shelf. Because when it comes to versatility, METHOCEL gums have no match. The keys are the ability of METHOCEL gums to thermally gel and to retain moisture. Thermal gelation produces batter stability which leads to good “over-spring”; the building and stabilizing of volume during the early stages of baking. Enhanced stability means voids in the product are more uniform in size which leads to more uniform crumb structure. Then the gel protects this structure from falling by strengthening the gas cells. The moisture holding capacity of METHOCEL gums further enhances product texture… initially over time. Increased moisture retention also helps improve product yield. Since water stays put there’s less need to compensate with more of the other ingredients in the mix. Increases in yield of two to three percent are typical. In short, due to their versatility, METHOCEL Premium food gums are very useful in a wide variety of baked goods.
