V-90 is a coated anhydrous monocalcium phosphate, in which each crystal has a slowly soluble phosphatic coating. This slows the penetration of liquid — and hence the leavening action — since the coating must be penetrated before the crystal is hydrated, and reaction with the sodium bicarbonate begins.
The initial action during mixing produces only about 20% of the available CO2. Some 40-50% more CO2 will be released during a 10-15 minute bench period.
Ideal for a variety of applications. V-90 is typically used in self-rising corn meal, pancake and waffle mixes, and prepared cake mixes in conjunction with other leavening phosphates.
