The crystalline structure shown does not occur in all stearic acids. It is an unusual phenomenon which occurs at an approximate 55:45 weight ratio of palmitic to stearic acid. This results in physical characteristics that are decidedly different from other stearic acids. Such characteristics as titer, specific gravity, shrinkage, and hardness are greatly influenced by this crystalline structure. In turn, these physical differences can affect your end product performance.
For example, in cosmetic creams the fracture is adversely affected by a non-crystalline stearic acid. In molded products shrinkage of crystalline stearic acids is a critical parameter.
