sodium bisulfite is used as a preservative, it prevents bacterial growth and browning in dried fruits, wines, and jams
interestingly, sodium bisulfits destroys vitamin b1 (thiamine) so it isn’t allowed to be used in meats or other significant sources of vitamine b1
it is not allowed to be used on fresh produce due to risk of allergic and asthmatic reactions
