DEPC (Diethyl Pyrocarbonate)-is a simple and reliable substitute for the conventional heat sterilization treatment of low alcohol wines. And, it protects without harming flavor. DEPC has been cleared as a fermentation inhibitor by the FDA for use in still wines at levels up to 200 ppm.
SODIUM BENZOATE U.S.P. — is widely used for its effectiveness against yeast, molds and some bacteria. A stable, crystalline powder, it is especially useful in beverages and other foods with low pH (4.5 or under). It is supplied as Powder and Flakes in 100-, 50- and 25-lb. drums.
